Use electric mixer. Definitely 2 mins. Excellent flavour. Much better if use large eggs. Also takes 30/40, mins in my oven which is gas. Absolutely perfect. Moist. Keeps for 5 days covered in cling wrap. It is much better than the box from supermarkets. Definitely recommend mix for 2 mins even if you don't think it needs. Thickens. It is so light and spongy.
